Homemade muffins

Ingredients (Basic recipe)
- 2 cups all purpose flour
- 3 tsp baking powder
- 1/2 tsp salt
- 2-3 tbsp brown sugar
- 2 eggs, slightly beaten
- 1 cup milk
- 4 tbsp melted margarine or vegetable oil
Method
- Combine flour,baking powder,salt and sugar.
- Blend eggs,milk and margarine.
- Add to flour and stir until moisten.
- Grease muffin pan and fill batter 2/3 full. Plain or colorful wax paper can also be used to make tulip cups for a more festive look.
- Bake at 400 F for about 15 minutes. Serve with topping of your choice.
How to make tulips or cups liners for pans.
What you will need:
Scissors
parchment or wax paper
glass (should fit into pan fairly loosely)
Cut wax or parchment paper to (about 6 x 4 inches for every liner). increase or decrease size according to pan size.
Place parchment paper into cup of pan and place glass into pan form tulip.
And there you have it easy cup liners or tulips.
Why should I use cup liners?!
Using cup liners gives any cup cake or muffin a more festive or celebratory look and makes for easy pan clean up.Cup liners comes in all colors ,shapes and sizes. I always spray my cupcake/muffin pan first so the cupcake/muffin tops don't stick to the pan. Then I insert the liners, and spray the liners lightly also, just to make sure the papers peel away nicely.
Variations
Date or Raisin muffin: Add half cup dates or raisins.
Orange muffins: Add add 1/4 cup candied orange peel finely chopped.
Cheese muffins:Add half cup grated cheese to dry ingredients.
Banana muffins:Add 1/4 cup mashed banana to dry ingredient.
Cornmeal muffins:Substitute 1/2 cornmeal for 1 cup flour.
Oatmeal muffins:Substitute 1/2 oatmeal for 1/2 cup flour.
Apple muffins:Add 1/2 cups grated apples and 1/4 cup raisin to dry ingredients.
Carrot and walnut muffins:Add 1/2 cup grated carrot and 1/4 cup fine chopped walnuts.
